Receita da Marinada para Bifanas no Pão
Ingredientes:
8 bifanas do lombo (bem fininhas)
700 ml de cerveja
2 colheres de sopa de azeite
2 folhas de louro partidas (sem a nervura do meio)
1 colher de sopa de massa de pimentão
1 colher de chá de pimentão doce
4 dentes de alho
Sal q.b.
Pimenta preta q.b.
Preparação da Marinada:
Amaciar a carne:
Coloque as bifanas direitas, dentro de um saco plástico para não sujar a tábua de cozinha. Comece por bater gentilmente as bifanas com um martelo de carne ou com as costas de uma faca larga. Trabalhe ambos os lados das bifanas— isto ajuda a deixá-las mais tenras e suculentas. Depois de ja ter amaciado as bifanas retire-as do saco, já não precisamos dele.
Tempere:
Coloque as bifanas num recipiente com tampa. Tempere com sal e pimenta.
Misture os ingredientes da marinada:
Tire a pele aos dentes de alho, coloque cada dente num esmagador de alho e triture-os para cima das bifanas, junte o pimentão doce, o louro, o azeite e, por fim, a cerveja. Mexa tudo muito bem, para envolver a carne nos sabores da marinada.
Deixe marinar:
Tape o recipiente e guarde no frigorífico até ao dia seguinte (idealmente 8 a 12 horas) para que a carne absorva todo o sabor da marinada.
Como Cozinhar e Servir as Bifanas no Pão
Ingredientes:
2 colheres de sopa de óleo vegetal
1 colher de sopa de banha
1 colher de sopa de manteiga
1 cebola picada
2 dentes de alho esmagados
2 colheres de sopa de polpa de tomate
1 pitada de cravinho.
1 colher de café de cominhos moídos
2 colheres de sopa de whisky ou brandy
1 colher de café de, molho inglês.
Meio cubo de caldo de carne.
Carcaças frescas (pão típico comum português)
Mostarda a gosto (não é opção a mostarda faz parte do sabor como este deve ser)
Metade de uma malagueta seca
Preparação:
Numa frigideira larga, aqueça o óleo. Junte a manteiga e a banha e deixe derreter. Adicione a cebola picada e os alhos esmagados e deixe refogar.
Junte o cravinho, os cominhos, a polpa de tomate, a malagueta, o whisky, o molho inglês o meio cubo de caldo de carne e junte o liquido da marinada com o louro e deixe o molho levantar fervura. Depois de já ter fervido, retire as folhas de louro e triture tudo com a varinha mágica.
Adicione a carne:
Junte as bifanas e deixe cozinhar alguns minutos de cada lado, até ficarem bem tenras e envolvidas no molho.
Prove o molho para ver se está bom de sal e de picante.
Sirva na carcaça:
Corte as carcaças ao meio e regue o interior do pão com um pouco do molho quente. Coloque por cima uma ou duas bifanas bem suculentas.
Espalhe mostarda a gosto por cima da carne, já dentro do pão. Este toque dá um contraste ligeiramente ácido e eleva o sabor a outro nível. Um clássico que não pode faltar numa bifana bem portuguesa!

In this post, I’ll show you how to prepare the perfect marinade for thin-cut pork loin steaks (bifanas), share the full cooking method, and give you extra tips to make sure you serve up the best bifanas at home – with the final touch that can’t be skipped: a generous spread of mustard!
Bifana Marinade Recipe
Ingredients:
8 thin pork loin steaks (bifanas)
700 ml light beer
2 tablespoons olive oil
2 bay leaves (central vein removed and leaves broken)
1 tablespoon Portuguese sweet red pepper paste (massa de pimentão)
1 teaspoon sweet paprika
4 garlic cloves
Salt, to taste
Black pepper, to taste
How to Make the Marinade:
Tenderise the meat:
Place the bifanas flat inside a plastic bag to avoid messing up your cutting board.
Using a meat mallet or the back of a large knife, gently pound both sides of each steak. This helps make the pork more tender and juicy.
Once done, remove the meat from the bag — you won’t need it anymore.
Season the meat:
Place the steaks in a container with a lid. Season with salt and black pepper.
Add the marinade ingredients:

2 tablespoons vegetable oil

1 tablespoon butter

2 tablespoons tomato paste
1 pinch of ground cloves
1 teaspoon ground cumin
2 tablespoons whisky or brandy
1 teaspoon Worcestershire sauce
½ beef stock cube
½ dried chili (optional, for heat)
Fresh Portuguese carcaça rolls (white bread rolls with soft interior and thin crust)
Yellow mustard, to taste (not optional – it’s essential to the true flavour!)
Cooking Method:
Start the sauce:
In a wide frying pan, heat the oil. Add the butter and lard, and let them melt.
Then add the chopped onion and crushed garlic, letting it sauté gently.
Add the flavour:
Stir in the ground cloves, cumin, tomato paste, the dried chili, whisky, Worcestershire sauce, and half a stock cube. Pour in the liquid from the marinade, including the garlic and bay leaves, and bring to a boil.
Blend the sauce:
Once it’s boiled for a few minutes, remove the bay leaves and blend the sauce with a hand blender (immersion blender) until smooth.
Cook the bifanas:
Add the pork steaks to the pan and cook for a few minutes on each side, until tender and fully coated in the rich sauce.
