Empadão recipe
Ingredients:
600 g minced meat
1 chopped onion
2 chopped garlic cloves
1 bay leaf
Olive oil
100 ml cream
50 ml white wine
Salt and pepper
Mashed Potatoes (recipe below)
Egg yolk to taste
Preparation:
Sauté the minced garlic, chopped onion and bay leaf in olive oil. Add the minced meat and cook for a few minutes.
Cool with the white wine. Let the wine evaporate. Add the cream and season with salt and pepper, stir and turn off the heat, set aside.
Recipe for mashed potatoes:
Ingredients:
1 kg of boiled potatoes without the skin (boil the potatoes covered with water in a pan with salt, they will cook in about 20 to 25 minutes)
200 ml hot milk
50g butter
Salt and pepper
1 teaspoon nutmeg
Preparing the mashed potatoes:
Mash the potatoes in the saucepan with a potato masher or if you don't have one use a fork. Add the hot milk and butter and bring to the boil over a low heat, stirring constantly until it forms a puree. Add the nutmeg, stir and mix well. Season with salt and pepper, stir and set aside.
Arrange in a pyrex or serving dish, grease the bottom with butter, place the minced meat on the bottom, spread it out evenly and cover with the mashed potato. Smooth the top with a spoon or fork again, brush with a beaten egg yolk (if you don't have one, you can brush with milk) Bake in a preheated oven at 180ºC for 20 minutes or until golden brown on top.
Serve with a big smile, bon appetit!
Tip: You can make the pie using store-bought instant mash if you want to save time, but instead of making it with water as suggested on the package, make it with hot milk and add nutmeg and butter, then season with salt and pepper and it's delicious and saves time!
