Pré-aqueça o forno a 180 °C.
Tostar as amêndoas laminadas:
Egg cream cake
Ingredients for the cake:
6 eggs
200 g sugar
150 g sifted flour
1 teaspoon baking powder
We'll also need custard, I'll give you the recipe below.
Preparation:
Preheat the oven to 180 °C.
Beat the eggs with the sugar until you have a whitish, chunky mixture.
Add the flour (add a tablespoon of flour at a time while beating the mixture), add the yeast and beat well, set aside.
Grease a cake tin with butter and sprinkle with flour.
Pour the batter into the prepared tin and bake for about 30 minutes. After this time, do the toothpick test (if the toothpick comes out clean, the cake is already baked).
Once ready, remove from the oven, let the cake cool, set aside and then carefully unmold. Now let's make the custard for the icing.
Egg cream icing for the cake:
Ingredients:
12 egg yolks
300g sugar
200 ml water
1 tablespoon Maizena flour (cornstarch)
2 tablespoons butter
Preparation:
First let's make a syrup, put the water and sugar in a saucepan and bring to the boil until it reaches pearl point, it takes about 4 minutes to reach this point after boiling and the appearance is that when we pass the spoon through the bottom of the saucepan and then remove it we see that a small ball forms on the wooden spoon, a thicker drop hanging off the end.
Once this point is reached, turn off the heat and set the syrup aside to cool.
In a separate bowl, add the egg yolks and starch and mix well, incorporating the mixture well. Once the syrup has cooled, pour the syrup into the yolk mixture and while you're pouring in the syrup, beat the mixture.
Now put the mixture back in the saucepan and bring it to the boil, stirring constantly until it thickens. Once the cream has thickened, turn off the heat and add the butter until it has melted very well into the mixture.
Set aside in the fridge until cold and only then can you cover the cake with the custard.
Topping:
Once the custard is cool enough, cover the cake with it.
Toast the slivered almonds and put them on top and it's delicious, as you can imagine!
Toast the slivered almonds:
Put the slivered almonds in a frying pan with nothing on and put on a low heat to toast them. When they start to brown, turn off the heat and stir because the pan is hot and the almonds will still brown on the other side even when the heat is off.
Serve with a big smile, bon appetit!
