Pernil à portuguesa

Ingredientes para 4 pessoas:

1 Pernil fumado grande.
Azeite
10 dentes de alho, laminados.
1 colher de sopa, de mel.
2 ramos de coentros picadinhos.
100 ml de vinho branco ou rose.
1 colher de café, de sal grosso.
100 ml da água de cozer o pernil. 
1 cubo de caldo de carne.
2 cebolas descascadas, com um cravinho espetado.
1 linguiça picante cortada em rodelas finas.

Preparação:

Coza o pernil na panela de pressão, com água e as cebolas com um cravinho espetado durante 45 minutos. 

Retire o pernil já cozido e reserve a água da cozedura. Num tabuleiro de ir ao forno, disponha o azeite ao seu gosto, deite os alhos laminados os coentros o vinho e o cubo de caldo de carne e os 100 ml da água da cozedura do pernil e a linguiça picante. Barre o pernil com mel, polvilhe com pimenta e leve ao forno A 180º, de vez em quando vá regando o pernil com uma colher de sopa com o molho que se forma no fundo.  

Arroz para acompanhar o pernil: 

300 ml de arroz, lavado e escorrido
Água da cozedura do pernil 600 ml
1 colher de café, de sal grosso.
4 colheres de sopa de óleo alimentar.
150 g de bacon, cortado em tirinhas.
2 dentes de alho.
3 colheres de sopa de vinho branco.
1 folha de louro.
Raspas de meia cenoura.


 

Preparação do arroz:

Refoga-se os alhos no óleo levemente junto com folha de louro. Junta-se o arroz e deixa-se fritar mexendo bem. Rega-se com o vinho, junta o bacon, as passas. Os fios de cenoura, mexe mais um pouco e junte a água do pernil, tape deixe ferver durante 5 min. Desligue o lume mas não destape e deixe ficar tapado até servir. Acompanhe o pernil com o arroz e batatas fritas com sal e tomilho.

Portuguese ham

Ingredients for 4 people:

1 large smoked ham.
Olive oil
10 cloves of garlic, sliced.
1 tablespoon of honey.
2 sprigs of chopped coriander.
100 ml white or rosé wine.
1 teaspoon of coarse salt.
100 ml of the water used to cook the shank.
1 beef stock cube.
2 peeled onions with a clove stuck in.
1 spicy sausage cut into thin slices.

Preparation:

Cook the shank in the pressure cooker with water and the onions with a clove stuck in for 45 minutes.

Remove the cooked shank and reserve the cooking water. Arrange the olive oil to your liking on a baking tray, add the sliced garlic, coriander, wine and bouillon cube, 100 ml of the pork shank cooking water and the spicy sausage. Spread the pork shank with honey, sprinkle with pepper and bake in the oven at 180º, occasionally drizzling the pork shank with a tablespoon of the sauce that forms at the bottom.

Rice to accompany the ham:

300 ml rice, washed and drained
Water from cooking the shank 600 ml
1 teaspoon of coarse salt.
4 tablespoons of cooking oil.
150 g bacon, cut into strips.
2 cloves of garlic.
3 tablespoons of white wine.
1 bay leaf.
Shavings of half a carrot.

Preparing the rice:

Sauté the garlic in the oil lightly together with the bay leaf. Add the rice and let it fry, stirring well. Pour in the wine, add the bacon and raisins. The carrot strings, stir a little more and add the water from the shank, cover and boil for 5 minutes. Turn off the heat but don’t uncover and leave covered until serving. Accompany the shank with rice and fried potatoes with salt and thyme.

Serve with a big smile, bon appetit!
