To make this soup, I salted a piece of pork rind three days beforehand, covered it completely in coarse salt and left it in the fridge for three days. On the same day, the pork rind is washed and rinsed under running water to remove the excess salt and it's ready to be used as an ingredient in this fabulous soup. I usually buy a large piece and then cut it into pieces, salt everything and put the pieces I don't use in bags with the salt and everything and freeze them like this. Then, when I need it, I defrost it and wash it to remove the excess salt and cook it as normal in the soup to give it a lot of flavor!

Salted pork belly soup recipe

Ingredients

1 piece of pork belly salted 3 days in advance
500 g red beans
1 meat sausage
3 thinly sliced carrots
1 farinheira
Salt and pepper
Chopped coriander
1 onion
Olive oil
150 g elbow pasta
1 teaspoon cumin powder
Half a small slatted cabbage
1 bay leaf
2 potatoes peeled and diced

Preparation:
In a pan of water, cook the "chorizo" and "farinheira" separately for about 15 minutes, then discard the water and set aside.

Soak the beans the day before. On the day of making the soup, cook the beans in the pressure cooker (it takes about 40 minutes), add an onion and salt. Set aside the cooked beans and the cooking water.
Sauté the onion in a pan with the olive oil and let it brown gently.

Add 2 liters of water to the pan.
Add 2 carrots, cleaned and diced, an onion cut into quarters and the bay leaf. Cover the pot and cook for twenty minutes.

After this time, remove the bay leaf and discard. Add half the amount of beans you've boiled and mash everything together, set aside.
Now add the remaining diced carrot and the shredded cabbage, the potato cubes and the cumin to this cream and stir a little. Season with salt and pepper.

Add the remaining whole beans and the water from cooking the beans. Add the piece of salted pork belly.

Cover the pan and cook for about 20 minutes.

When the vegetables are cooked, add the coriander, salt and pepper

Now add the pasta and simmer until it's cooked, usually 10 minutes should be enough, if necessary add a little hot water. Once the soup is ready, finish by adding some freshly chopped coriander, Cut the "farinheira" into pieces, the "chouriço" into slices and the salted pork belly into small pieces and put them on a plate for the table. At the table, each person places their own "farinheira", "chouriço" and pork belly. The soup is ready, call everyone to the table and bring some bread, you'll need it!
