Receita com febras

Ingredientes para 4 pessoas:

1 kg de febras de porco finas.
2 folhas de louro.
1 cebola picadinha.
2 de alho laminados.
3 colheres de sopa de polpa de tomate.
200 ml de caldo de carne.
100 ml de vinho branco.
Meio chouriço cortado em rodelas finas.
60 g de bacon cortado em cubinhos.
1 kg de batatas olho de perdiz médias descascadas, cortadas em 3 e cozidas.
Azeite q.b
1 prato raso com farinha de trigo.
Sal e pimenta.
1 chávena de azeitonas pretas descaroçadas.
Meia chávena de picles.
1 colher de café de pimentão doce em pó.
3 ovos cozidos, depois descascados e cortados em rodelas grossas.
Salsa picadinha.

Preparação:

Tempere as febras com sal e pimenta. Passe-as pela farinha e frite-as em azeite juntamente com os alhos e as folhas de louro. Depois de bem fritas de ambos os lados, retire-as para um prato, tape para não arrefecerem.

Na frigideira onde as fritou, coloque um pouco mais de azeite e refogue a cebola. Adicione o bacon e o chouriço, frite tudo mexendo sempre. Refresque com o vinho. Deixe o vinho reduzir. Junte a polpa de tomate e o pimentão em pó, cozinhe uns minutos. Adicione o caldo de carne e as azeitonas.

Deixe levantar fervura e cozinhe depois em lume brando uns 10 minutinhos mexendo de vez em quando se vir que é necessário junte um pouco mais de caldo de carne. Tempere o molho com sal e pimenta.

Numa travessa disponha as batatas cozidas. Por cima coloca as febras panadas. Regue tudo com o molho que fez na frigideira. Junte os picles os ovos cozidos cortados em rodelas e polvilhe com salsa fresca picadinha. Regue por cima com um fio de azeite.

Steak recipe

Ingredients for 4 people:

1 kg of thin pork steaks.
2 bay leaves.
1 finely chopped onion.
2 sliced garlic.
3 tablespoons of tomato pulp.
200 ml of meat stock.
100 ml white wine.
Half a chorizo sausage cut into thin slices.
60g bacon cut into small cubes.
1 kg of medium-sized partridge potatoes, peeled, cut into thirds and boiled.
Olive oil to taste
1 shallow dish with wheat flour.
Salt and pepper.
1 cup of stoned black olives.
Half a cup of pickles.
1 teaspoon of paprika powder.
3 hard-boiled eggs, then peeled and cut into thick slices.
Chopped parsley.

Preparation:

Season the pheasants with salt and pepper. Coat them in flour and fry them in olive oil together with the garlic and bay leaves. Once well fried on both sides, remove them to a plate and cover so they don’t cool down.

In the frying pan where you fried them, add a little more olive oil and sauté the onion. Add the bacon and chorizo and fry everything, stirring constantly. Cool with the wine. Let the wine reduce. Add the tomato pulp and chili powder and cook for a few minutes. Add the meat stock and olives.

Bring to the boil and then cook over a low heat for about 10 minutes, stirring from time to time if you feel the need to add a little more stock. Season the sauce with salt and pepper.

Arrange the boiled potatoes on a platter. Place the breaded febras on top. Drizzle everything with the sauce you made in the frying pan. Add the pickles, sliced hard-boiled eggs and sprinkle with chopped fresh parsley. Drizzle over the top with a drizzle of olive oil.
